Tilapia with Roasted Carrots & Farro

Greek Yogurt (plain)

Feta cheese (block)

Smoked Paprika

- Step 1
Cook the farro according to package instructions. Preheat the oven to 400°F. Peel & cut the carrots into diagonal slices. - Step 2
Add the carrots to a parchment paper-lined sheet tray. Drizzle with olive oil & season with salt, pepper & thyme, if using. Toss well, then bake at 400°F for 10-15 min, until the carrots are starting to soften & brown. - Step 3
Next, remove the sheet tray from the oven & add the tilapia filets. Drizzle the filets with olive oil & season them with salt, pepper & half of the smoked paprika. Return the sheet tray to the oven for 10-15 min, until the fish & carrots are cooked through - Step 4
Meanwhile, prepare the creamy feta. Add the Greek yogurt, crumbled feta & the remaining smoked paprika to a bowl & mix well. Drizzle with olive oil & season with salt & pepper. Mix again. - Step 5
When the carrots & tilapia are cooked through, remove the sheet tray from the oven. - Step 6
Spread the feta mixture on a plate. Add the farro on top, followed by the roasted carrots & tilapia. Garnish with extra crumbled feta & thyme, if desired. Serve & enjoy!
