- Step 1
Cook the couscous according to package directions. Season the couscous with salt & pepper. Add a drizzle of olive oil. Mix to combine & set aside. - Step 2
Wash & small dice the cucumbers. - Step 3
Wash & small dice the tomatoes. - Step 4
Peel & thinly slice the onions. - Step 5
Finely chop the mint & parsley. - Step 6
In a bowl, combine the couscous, cucumbers, tomatoes, onions, parsley & mint. Add a generous drizzle of olive oil & a squeeze of lemon. Season with salt & pepper. Set aside in the refrigerator. - Step 7
Heat a drizzle of olive oil in a frying pan on medium heat. Season the chicken with salt & pepper. Add the chicken & cook for 6-7 mins on each side or until the chicken is fully cooked (internal temp 165ºF). - Step 8
Plate the tabbouleh & top with the chicken. Serve & enjoy!
