Sweet potato

3/4 cup
Quinoa (cooked)

1/4 clove
Garlic

1/8 cup
Greek Yogurt (plain)

1 wedges
Lemon

Feta cheese (block)

1/2 tsp
Smoked Paprika

Preheat the oven to 400°F. Peel & cut the sweet potatoes into cubes. - Step 2
On a parchment-lined sheet tray, add the sweet potatoes. Drizzle with olive oil. Season with salt, pepper & smoked paprika. Mix then bake for 15-20 min at 400°F. - Step 3
Remove the sheet tray from the oven & move the sweet potatoes to one side. Add the falafel to the other side & return to the oven for 10-15 min. Remove when the sweet potatoes are tender & the falafel are cooked through & golden brown. - Step 4
Meanwhile, prepare the yogurt sauce. In a bowl, mix the yogurt, lemon zest & lemon juice. Grate in the garlic. Season with salt, pepper & a drizzle of olive oil. Set aside. - Step 5
Reheat quinoa according to package instructions. - Step 6
Serve the quinoa, sweet potatoes & falafel in a bowl with the yogurt sauce on the side. Sprinkle with crumbled feta & chopped fresh parsley, if you have any. Enjoy!
