- Step 1
Preheat the oven to 400°F. Wash & cut the sweet potatoes into large chunks. - Step 2
Add the sweet potatoes to a baking dish. Top with a drizzle of olive oil, salt & pepper. Stir to coat the sweet potatoes in the seasoned oil. Bake for 15-20 min, or until fork-tender. - Step 3
Remove the dish from the oven. - Step 4
Spoon the hummus into a serving bowl. Arrange the sweet potatoes & arugula alongside the hummus. Garnish with crumbled feta. Season with salt, pepper & another drizzle of olive oil. Enjoy!
