  • Step 1
    Preheat the oven to 400°F. Clean the potatoes & slice into wedges.
  • Step 2
    On a sheet tray lined with parchment paper, add the potatoes & a generous drizzle of olive oil. Season with salt, pepper & oregano. Toss to evenly coat. Roast for 30 min at 400°F.
  • Step 3
    Meanwhile, wash & slice the tomatoes into thin rounds.
  • Step 4
    Slice the mozzarella into thin rounds. Add the tomato & mozzarella slices to a plate.
  • Step 5
    Heat a drizzle of oil in a pan over medium-high heat. Pat the steak dry with a paper towel. Season all over with salt & pepper. Sear the steak for 4-5 min on each side for medium-rare doneness (cooking times depend on the thickness of your steak so it may take less or more time).

    Transfer the steak to a cutting board & slice if you wish.
  • Step 7
    Remove the potatoes from the oven. Serve with the caprese salad & steak. Top with a drizzle of pesto & season with salt & pepper to taste. Garnish with fresh basil leaves if you have any. Enjoy!
