Roughly chop the parsley. Thinly slice the scallions. - Step 2
Cook the couscous according to package directions. Fluff the couscous with a fork, then fold in the chopped parsley & scallions. Drizzle with olive oil & a squeeze of lemon. Season with salt & pepper. Set aside. - Step 3
Pat the steak dry. Season all over with salt, pepper & any additional seasonings you love! Drizzle neutral oil (we recommend avocado oil!) over the steak & rub to coat. - Step 4
Preheat a frying pan pan over high heat. Add the steak & cook for 3-4 min, undisturbed. Flip. Continue grilling the steak for another 3-4 min, then remove from the heat & transfer to a plate. Tent the steak with foil & rest for ~10 min before slicing. - Step 5
While the steak cooks, heat a drizzle of olive oil in another pan over medium-high heat. Once hot, add the green beans & cook, stirring occasionally, until blistered & tender, 5-6 min. Season with salt & pepper, then set aside. - Step 6
Serve the sliced steak with a side of herby couscous & green beans. Enjoy!
