  • Step 1
    Cook or soak the couscous according to the package instructions.
  • Step 2
    Add a drizzle of oil & the harissa to a pan over medium heat. Cook, stirring for 1-2 min.
  • Step 3
    Fluff the couscous with a fork. Add the harissa oil, salt & pepper. Stir to combine.
  • Step 4
    Top with crumbled feta, vinegar & chopped mint. Add another drizzle of olive oil. Enjoy!
