Cooked shrimp

1/2 cup
Cherry tomatoes

1/4 cup
Corn (canned)

1 tbsp
Feta cheese (crumbled)

1 tbsp
Basil (fresh)

- Step 1
Drain the canned corn (or use thawed frozen corn). - Step 2
Wash & halve the cherry tomatoes. - Step 3
Heat a drizzle of oil in a pan over high heat. Add the tomatoes. Cook, stirring for 1-2 min. - Step 4
Add the thawed cooked shrimp & corn. Season with salt & pepper. Add a pinch of cayenne (optional). Cook, stirring for 3-5 min. Remove from heat. - Step 5
Serve in bowls garnished with crumbed feta & fresh basil leaves. Season with salt & pepper. Add a final drizzle of olive oil. Enjoy!
