Lentils (cooked)

1 handful
Arugula

1/3 lb
Potato

1/8 cup
Sour cream

1/2 tbsp
Chives (fresh)

- Step 1
Peel & cube the potatoes. - Step 2
Cook the potatoes in a pot of salted boiling water for 15 min. - Step 3
When the potatoes are fork-tender, drain & set aside. - Step 4
Drain the canned lentils. - Step 5
Arrange the potatoes, lentils, smoked salmon & arugula alongside each other in a serving bowl. Top with a dollop of sour cream. - Step 6
Garnish with snips of fresh chives (optional), salt, pepper & a drizzle of oil. Enjoy!
