  • Step 1
    Peel & cube the potatoes.
  • Step 2
    Cook the potatoes in a pot of salted boiling water for 15 min.
  • Step 3
    When the potatoes are fork-tender, drain & set aside.
  • Step 4
    Drain the canned lentils.
  • Step 5
    Arrange the potatoes, lentils, smoked salmon & arugula alongside each other in a serving bowl. Top with a dollop of sour cream.
  • Step 6
    Garnish with snips of fresh chives (optional), salt, pepper & a drizzle of oil. Enjoy!
