Rotisserie chicken

Chicken broth

Green chiles (canned)

Cumin (ground)

Yellow onion
1/2 cup
Cannellini beans (cooked)
1/2 cup
Corn (canned)

Heavy cream

2 tbsp
Cheddar (shredded)

Cilantro (fresh)

- Step 1
Peel & dice the onion. - Step 2
Add the diced onions, chicken broth, green chiles, corn & cannellini beans (drained & rinsed) to the slow cooker base. Season with salt, pepper & cumin. Cover & cook on HIGH for 4 hr or LOW for 7 hr. - Step 3
Meanwhile, shred chicken into bite-sized pieces & set aside. - Step 4
When the chili is done cooking, stir in the shredded chicken to warm through. While stirring, slowly pour in the heavy cream. - Step 5
Serve chili topped with cheddar cheese & cilantro (both optional). Enjoy!
