Slow Cooker Tomato & Sausage Tortellini Soup

Ingredients for 1

Tortellini (Spinach & cheese)
2 oz
Italian pork sausage (ground)
1/2 cup
Tomato sauce
1/8 cup
Heavy cream
1 handful
Spinach (fresh)
1/4
Yellow onion
3/4 cup
Chicken broth
optional
1/4 tsp
Garlic powder
optional
1 tbsp
Parmesan (grated)

- Step 1
Peel & mince the onion. If using sausage links, slice them lengthwise & peel off the casing. - Step 2
Heat a drizzle of olive oil in a skillet over medium-high heat. Add the onion & season with salt & pepper. Cook for 4-5 min, until softened. - Step 3
Add the sausage meat & cook, stirring for 4-5 min, until cooked through. Transfer the onion & sausage to the slow cooker base. - Step 4
Add the tomato sauce & chicken broth to the slow cooker. Season with salt, pepper & garlic powder, if you'd like. Stir, cover & cook on HIGH for 5 hr or LOW for 8 hr. - Step 5
About 20 min before serving, add the tortellini, cream & spinach with the slow cooker on HIGH. Stir occasionally & cook until the tortellini is warmed through. - Step 6
Serve in bowls garnished with parmesan cheese (optional). Enjoy!
