Cooked shrimp

Tomato

1/4 cup
Pineapple (canned)

1/4
Red onion

1 tbsp
Soy sauce

If necessary, defrost the shrimp. In a saucepan of boiling salted water, cook the rice according to package instructions. Drain when cooked. - Step 2
Drain the pineapple & cut into chunks, if necessary. Heat a drizzle of olive oil in a frying pan over medium heat. Add the shrimp, pineapple & soy sauce. Stir & cook for 3-4 mins, until the shrimp are caramelized. - Step 3
Wash & small dice the tomatoes. - Step 4
Peel & small dice the red onions. - Step 5
Wash & roughly chop the cilantro (optional). - Step 6
Prepare the tomato salsa. In a bowl, add the tomatoes, onions & a drizzle of olive oil. Season with salt & pepper. Add the cilantro (optional) & mix. - Step 7
Serve the rice in a shallow dish with the pineapple shrimp & tomato salsa. Season to taste & garnish with cilantro (optional). Enjoy!
