Couscous

Cooked shrimp
1/8 cup
Tomatoes (canned, peeled)
2 oz
Feta cheese (block)
1 tbsp
Mint (fresh)
1/4 clove
Garlic

1 pinch
Cayenne pepper

- Step 1
Add the canned tomatoes & minced or crushed garlic to a pan over medium heat. Cook, stirring for 5 min. - Step 2
Add the mint, shrimp, salt & pepper to the pan. Season with cayenne or chili powder for extra kick! - Step 3
Stir to combine. Reduce the heat to low & cook for 5 min. - Step 4
Meanwhile, in a heatproof bowl, cover the dry couscous with boiling water. Season with salt & pepper. - Step 5
Cover & set aside for 5 min, or until it's absorbed all the water. - Step 6
Serve the saucy shrimp over a bed of couscous. Garnish with crumbled feta cheese, fresh mint leaves & a drizzle of oil. Enjoy!
