Polenta
2 cups
Milk (whole)
1 tbsp
Parmesan (grated)
1/2 cup
Cherry tomatoes
2.5 oz
Cooked shrimp
1/2 clove
Garlic

Basil (fresh)

1 tbsp
White wine

- Step 1
Wash & halve the cherry tomatoes. - Step 2
Heat a drizzle of oil in a pan over medium heat. Add the tomatoes. Cook, stirring for 2 min. - Step 3
Bring the milk to a gentle boil in a small pot. - Step 4
Mince the garlic. - Step 5
Add the garlic & shrimp to the pan with the tomatoes. - Step 6
Add the white wine to the pan (optional). - Step 7
Crush the tomatoes gently as you stir the ingredients together. Reduce the heat to low, cover & simmer. - Step 8
Add the polenta to the boiling milk. Whisk constantly until the polenta is smooth & creamy. Adjust the liquid as needed. - Step 9
Season the polenta with salt & pepper. Add the grated parmesan cheese. Stir to combine. - Step 10
Serve the polenta topped with the shrimp & tomato sauce. Garnish with fresh basil (optional). Enjoy!
