Cook the rice according to the package instructions. Once cooked, set aside to cool. - Step 2
Cut the avocado into cubes. Finely mince the onion. - Step 3
Add the rice to a bowl. Top with baby spinach, avocado, red onion & cooked shrimp. - Step 4
Add a drizzle of olive oil & squeeze of lime juice. Season with salt & pepper. Garnish with fresh chives (optional). Enjoy!
