Prepare the noodles according to the package instructions. - Step 2
In a small bowl, whisk together the lime juice, soy sauce & a drizzle of oil. - Step 3
Peel the avocado & remove the pit. Slice the avocado. - Step 4
Drain the noodles. - Step 5
Add the noodles to a serving bowl. Top with avocado slices, cooked shrimp & the soy-lime dressing. Garnish with fresh cilantro. - Step 6
Add chopped peanuts & lime wedges (optional). Enjoy!
