Ham (deli slices)

Avocado
1 handful
Spring mix lettuce

Chives (fresh)

Cut the avocado in half. Remove the pit. Then slice the avocado. - Step 2
In a small bowl, whisk together the eggs, salt & pepper. - Step 3
Melt a dab of butter in a pan over medium-low heat. Add the eggs & scramble for 2-3 min. At the end of cook time, add the ham to the pan. Heat the ham for 1 min. - Step 4
Serve the warm ham & eggs alongside the avocado slices & baby greens. - Step 5
Garnish with fresh chives (optional). Season with salt & pepper. Enjoy!
