  • Step 1
    Cut the avocado in half. Remove the pit. Then slice the avocado.
  • Step 2
    In a small bowl, whisk together the eggs, salt & pepper.
  • Step 3
    Melt a dab of butter in a pan over medium-low heat. Add the eggs & scramble for 2-3 min. At the end of cook time, add the ham to the pan. Heat the ham for 1 min.
  • Step 4
    Serve the warm ham & eggs alongside the avocado slices & baby greens.
  • Step 5
    Garnish with fresh chives (optional). Season with salt & pepper. Enjoy!
