  • Step 1
    Preheat the oven to 425°F. Wash the cherry tomatoes & add them to a baking dish. Grate the garlic, salt, pepper & add a drizzle of olive oil. Mix then roast for 10-12 min.
  • Step 2
    Meanwhile, in a pot of boiling water, add the eggs & cook for 6 min. Once cooked, run them under cold water to stop the cooking. Remove the shell carefully & reserve.
  • Step 3
    Prepare the yogurt sauce. In a bowl, mix the yogurt with salt, pepper, dill & a drizzle of olive oil.
  • Step 4
    Once nicely browned, remove the cherry tomatoes from the oven & serve on top of warmed lentils, soft-boiled egg & yogurt sauce. Add a few chopped parsley leaves, if you have any. Enjoy!
