  • Step 1
    Halve the avocado & remove the pit. Carefully slice the avocado & set aside.
  • Step 2
    In a small bowl, crack & beat the eggs.
  • Step 3
    On a pan over medium heat, add breakfast sausage. Break up the meat with a spatula. Cook, stirring 4-5 min until brown & crisp.
  • Step 4
    Add diced potatoes. Sir, cover & cook 5-6 min. Uncover & stir. Transfer everything to a bowl.
  • Step 5
    On the same pan, over low heat, add the beaten eggs. Season with salt & pepper. Scramble the eggs to your liking, about 2 min.
  • Step 6
    Gently stir in the cooked potatoes & sausage. Sprinkle in the cheese & melt for 1 min.
  • Step 7
    Heat a tortilla & scoop in the cheesy egg mixture. Top with a few avocado slices & a spoonful of salsa. Wrap it up & enjoy!
