Sausage & Butternut Squash Pasta

Butternut squash (frozen)

Italian pork sausage links (mild)

Pasta (Cavatappi)
1 cup
Spinach (fresh)
1/4 clove

- Step 1
In a pot of salted, boiling water, cook the pasta according to package instructions. Reserve a ladle of water before draining the pasta. Set aside. - Step 2
As the pasta cooks, slice the sausage into rounds. Heat a drizzle of oil in a pot over medium-high heat. Add the sausage & sear until browned on both sides, about 5-7 min. Transfer the sausage to a bowl & set aside. - Step 3
In the same pot, add the butternut squash. Stir until evenly coated in the oils. Cook for 10-15 more min, until heated through & tender. - Step 4
Grate in the garlic & stir to combine. Reduce the heat to low & stir in the spinach. Add a splash of reserved pasta water. Mix it all together & cover the pot. Steam until the spinach is wilted. - Step 5
Uncover the pot & stir. Add the pasta & sausage to the pot. Toss it all together. Serve & enjoy!
