  • Step 1
    Wash & dice the cucumber.
  • Step 2
    Heat a drizzle of oil in a pan over medium heat. Drain, rinse & add the chickpeas to the pan.
  • Step 3
    Add crushed tomatoes, cumin, salt & pepper. Stir & cook for 5 min.
  • Step 4
    Use a fork to smash the chickpeas into the sauce.
  • Step 5
    Warm or toast your pita if desired & cut it into fourths.
  • Step 6
    Serve the saucy smashed chickpeas with cucumber, pita bread & a dollop of Greek yogurt. Drizzle with olive oil & season to taste. Enjoy!
