Rice noodles

Peanut butter

1/4 cup
Coconut milk (full fat)

1 tsp
Sweet soy sauce

1/4 clove
Garlic

Thinly slice the steak. - Step 2
Prepare the satay sauce. In a bowl, combine: the peanut butter, coconut milk, sweet soy sauce, grated garlic & ginger. Season lightly with salt & pepper to taste. - Step 3
In a pot of salted boiling water, prepare the rice noodles according to package instructions. Once cooked through, drain the noodles. - Step 4
Meanwhile, heat a drizzle of olive oil in a pan, over high heat. Sauté the steak for 2 mins. - Step 5
Add the drained rice noodles & satay sauce to the pan. Stir to evenly coat. - Step 6
Serve the Satay Beef & Noodles in a plate. Top with fresh cilantro, if you have some & crushed peanuts. Re-season to taste & enjoy!
