Salmon with Corn & Mashed Potatoes

If using frozen salmon, defrost beforehand. Peel & cube the potatoes. - Step 2
Bring a pot of salted water to a boil. Add the potatoes. Cook for 15 min, or until fork-tender. - Step 3
Trim the stem & green leaves from the leek. Wash & slice the leek into rings. - Step 4
Melt a pat of butter in a pan over medium-high heat. Add the leeks. Sauté for 2-3 min, or until lightly browned. - Step 5
Add a splash of water & stir. - Step 6
Add the corn & the salmon. Cook the salmon for 2 min on each side, while you regularly stir the corn & leeks. - Step 7
Drain the potatoes. Mash them with salt, pepper & a pat of butter. - Step 8
Serve the salmon, corn, leeks & sauce over the creamy potatoes. Dinner's served!
