Andouille sausage (smoked)
1 cup
Brussels sprouts (fresh)
1/2 lb
Potato
1 tsp
Honey
1 tsp
Whole grain mustard
optional
1 tbsp
Almonds (sliced)

- Step 1
Preheat the oven to 425°F. Trim & halve the Brussels sprouts. - Step 2
Rinse the sprouts in a colander under running water. - Step 3
Wash & peel the potatoes. Cut them into cubes. - Step 4
Place the Brussels sprouts & potatoes on a parchment-lined baking sheet. - Step 5
Season with salt, pepper & a drizzle of olive oil. Stir to combine. - Step 6
Add the sausages (cut into chunks or left whole). Roast for 10 min at 425°F. - Step 7
In a small bowl, combine the honey & mustard. - Step 8
After 10 min, add the honey-mustard mixture to the veggies & sausage. - Step 9
Add chopped almonds (optional). Mix it all together. - Step 10
Continue cooking 10 min, or until the veggies are nice & golden. - Step 11
