  • Step 1
    Preheat oven to 450°F. Wash & thinly slice the zucchini, yellow squash & tomato.
  • Step 2
    Add the vegetables to an oven-safe baking dish. Toss with dried herbs, salt, pepper & olive oil.
  • Step 3
    Bake for 10 minutes.
  • Step 4
    Remove from oven, lay the cod over top the vegetables. Season with a drizzle of oil, salt & pepper. Cook for an additional 10 min, or until cod is cooked through. Enjoy!
