  • Step 1
    Wash the cherry tomatoes. Heat a drizzle of olive oil in a pan over medium-high heat. Add the cherry tomatoes to the pan. Season with salt & pepper. Cook, stirring for 1 min. Then cover & cook for 2 min.
  • Step 2
    In a small bowl, whisk together the ricotta, grated or minced garlic, salt, pepper & a drizzle of olive oil.
  • Step 3
    Remove the tomatoes from the heat.
  • Step 4
    Arrange the mini toast crackers on a serving tray.
  • Step 5
    Spread the ricotta mixture over the crackers.
  • Step 6
    Top with the tomatoes.
  • Step 7
    Season with salt & pepper. Drizzle olive oil. Garnish with fresh basil (optional). Enjoy!
