Red lentils (dry)

1/3 cup
Crushed tomatoes

1/4 cup
Coconut milk

1/2 clove
Garlic

1/4
Yellow onion

1 tsp
Curry powder

Carrots (fresh)

1/3 cup
Basmati rice

- Step 1
Peel & mince the onion. - Step 2
Peel & dice the carrot. Peel & mince the garlic. - Step 3
Heat a drizzle of oil in a pot over medium heat. Add the onion, carrot & garlic. - Step 4
Cook, stirring for 2 min. - Step 5
Season with salt & pepper. Add the curry powder & stir. - Step 6
Add the lentils & enough water to cover. Reduce the heat to low, cover & simmer for 10-15 min, stirring occasionally. - Step 7
Meanwhile, cook the rice according to the package instructions. - Step 8
Add the tomatoes & coconut milk to the lentils. Season with salt & pepper. Stir to combine. - Step 9
Serve the saucy lentils over the fluffy rice. Garnish with a splash of coconut milk & fresh cilantro (optional). Enjoy!
