Red lentils (dry)
1 cup
Cauliflower (fresh)
1/2 cup
Coconut milk
1 tbsp
Tomato paste
1/4
Yellow onion
1 tsp
Curry powder
1/3 cup
Basmati rice
1 tbsp
Cilantro (fresh)

- Step 1
Cook the rice according to the package instructions. - Step 2
Wash & cut the cauliflower into small florets. - Step 3
Peel & dice the onion. - Step 4
Heat a drizzle of oil in a pot over medium heat. Add the onion, tomato paste & curry powder. Cook, stirring for 2 min. - Step 5
Add the red lentils, cauliflower & a splash of water. Season with salt & pepper. - Step 6
Add the coconut milk & stir. Reduce the heat to low, cover & simmer for 10-15 min. Stir occasionally, adding more water if needed. - Step 7
Serve the red lentil & cauliflower curry alongside fluffed rice. Garnish with chopped cilantro (optional). Enjoy!
