  • Step 1
    Cook the ramen noodles according to package instructions & reserve the seasoning packet for a later step. Break the eggs into a bowl. Add soy sauce & black pepper, then whisk everything together.
  • Step 2
    Add a drizzle of olive oil to a pan over medium-low heat. Add the egg mixture & cook, mixing with a spatula. When cooked, remove from the heat & set aside.

    Wash & dice the zucchini into cubes. Add a drizzle of olive oil to a saucepan or Dutch oven over medium heat. Add the zucchini with a pinch of salt & pepper. Cook for 5-6 min, until softened.

    Pour in the water, cover & simmer for 10 min.

    Add the cooked noodles to the pan with the zucchini. Mix well, then add the seasoning packet & mix again. Cook for another 2-3 min.
  • Step 6
    Serve the noodles, veggies & broth in a bowl. Add the scrambled eggs & the nori, cut into thin strips. Enjoy!
