Clean & slice the bok choy. - Step 2
Clean & thinly slice the scallions. - Step 3
Bring the water to a boil in a pot. Whisk in the seasoning packets from the ramen noodles to create a flavorful broth. - Step 4
Carefully add the noodles & the dumplings to the boiling broth. Cook until fully cooked, about 4-5 min. (Make sure to check the package instructions - you may need to add the dumplings before the noodles instead so they're done at the same time.) - Step 5
About a minute before the noodles & dumplings are done, add the bok choy & spinach. - Step 6
Serve in bowls, garnished with scallions & chili oil (optional).
