recipe

  • Step 1
Preheat the oven to 375ºF. Cut the butter into small cubes (make sure the butter is cold!)
  • Step 2
In a large mixing bowl, add the canned pumpkin, heavy cream, vanilla extract & egg. Whisk to thoroughly combine.
  • Step 3
In another large mixing bowl, add the flour, pumpkin pie spice, baking powder, baking soda, brown sugar & a pinch of salt. Stir everything together.
  • Step 4
Add the cold cubed butter to the bowl with the dry ingredients. Using your hands, pinch the butter into the flour mixture. Continue working everything together with your hands until the mixture has a sandy consistency.
  • Step 5
Add the wet mixture to the dry. Using a spatula, fold the dough together.
  • Step 6
Dust a clean surface with flour & add the dough to the surface. Add a light dusting of flour on top of the dough. Form it into an 8 inch circle, about 1 inch thick.
  • Step 7
Cut the dough into 8 triangles. Place the scones onto a parchment paper lined sheet tray. Bake the scones at 375ºF for 20-25 min.
  • Step 8
While the scones are baking, make the glaze: In small bowl, add the powdered sugar & 1-2 tbsp of heavy cream. Whisk to combine. Add additional cream to loosen the glaze if needed.
  • Step 9
Remove the scones from the oven & place them on a rack to cool completely, about 1 hour. Once cooled, drizzle the glaze onto the scones & serve!
