  • Step 1
    Preheat the oven to 325°F. In a medium bowl, combine the dry ingredients: flour, baking soda, baking powder, pumpkin pie spice & a pinch of salt.
  • Step 2
    Soften the butter to room temperature. Use the microwave on half power for 30 sec.
  • Step 3
    In a large bowl, add the sugar & room temperature butter. Whisk until the mixture is light & fluffy, about 2 min. An electric mixer works well here too!
  • Step 4
    Add the canned pumpkin & whisk to combine.
  • Step 5
    Add the egg & whisk to combine.
  • Step 6
    Add the dry mixture to the wet mixture. Fold with a spatula until just combined.
  • Step 7
    Spray a loaf pan with baking spray. Add the batter & smooth the top. Bake for 45-55 min or until a knife in the center of the bread comes out clean. Let the bread cool for 20 min.
  • Step 8
    Slice the bread & serve topped with butter or whipped cream if you have!
