- Step 1
Roughly chop the parsley. Thinly slice the scallions. - Step 2
Cook the couscous according to package directions. Fluff the couscous with a fork, then fold in the chopped parsley & scallions. Drizzle with olive oil & a squeeze of lemon. Season with salt & pepper. Set aside. - Step 3
Heat a drizzle of olive oil in a pan over medium heat. Pat the pork dry with a paper towel, then season with salt, pepper & any additional seasonings you like (we suggest garlic powder & onion powder!). Add the pork to the pan & sear for 15-20 min, flipping occasionally, until browned on all sides & cooked through (internal temp 145°F). - Step 4
Meanwhile, heat a drizzle of olive oil in another pan over medium-high heat. Once hot, add the green beans & cook, stirring occasionally, until blistered & tender, 5-6 min. Season with salt & pepper, then set aside. - Step 5
When the meat is fully cooked, remove from the pan & transfer to a cutting board. Cover with foil to keep warm & rest for several min before slicing into 1/2 inch-thick medallions. - Step 6
Serve the sliced pork tenderloin with a side of herby couscous & green beans. Drizzle the green beans with olive oil & season with salt & pepper. Enjoy!
