Pork & Peanut Noodles

Rice noodles

Ground pork
1/2
Cucumber
1 tbsp
Peanuts
1 pinch
Cayenne pepper
2 tbsp
Soy sauce

- Step 1
Cook or soak the rice noodles according to the package instructions. - Step 2
Wash the cucumber. Cut it in half lengthwise & scoop out the seeds. Then slice the cucumber. - Step 3
Add the ground pork to a dry pan over medium-high heat. Brown the pork for 3-5 min. Break it up into pieces with a spatula as it cooks. - Step 4
Add most of the peanuts, reserving a few for garnish. Add the soy sauce & a splash of water. Here you can add additional sauces if you have them (we suggest hoisin sauce, sriracha sauce or teriyaki sauce)! Cook, stirring for 1 min. - Step 5
Drain the noodles. Add them to the pan with a pinch of cayenne pepper. Mix together & remove from heat. - Step 6
Transfer the noodles to a serving bowl. Top with sliced cucumber & the remaining peanuts. Garnish with fresh mint leaves (optional). Enjoy!
