Yukon Gold Potato
1/4 bunch
Broccoli (fresh)

Pesto
1/4 cup
Parmesan (grated)

- Step 1
Preheat the oven to 375ºF. Wash & cut the potatoes into wedges. - Step 2
Wash & cut the broccoli into florets. - Step 3
Line a sheet tray with parchment paper or foil. Add the broccoli & potatoes. Drizzle with olive oil & season with salt & pepper. Roast for 15 min at 375ºF. - Step 4
Remove the tray from the oven. Add the chicken breast to the tray & season with salt & pepper. Roast for an additional 20 min. - Step 5
Remove the tray from the oven. Top the potatoes & broccoli with the grated parmesan. Top the chicken with the pesto. Place back in the oven & roast for 5-10 more min, until the chicken is fully cooked (internal temp reaches 165°F). - Step 6
Serve & top with additional parmesan if desired. Enjoy!
