Perfect Pineapple Shrimp Fried Rice

Stir-fry veggie medley (frozen)

Raw shrimp (frozen)

- Step 1
Peel the shrimp if needed. If using frozen shrimp, defrost completely. - Step 2
Halve the pineapple from the stem to the root. Carefully cut around the inside of the pineapple, leaving a 1/2 inch border. Cut the flesh of the pineapple into 1 inch cubes. Using a spoon, scoop out the cubes. Discard the center core pieces. Reserve & set aside the remaining cubes along with any juices. - Step 3
Thinly slice the scallion. Separate the white & green pieces. - Step 4
In a small bowl, whisk the egg. - Step 5
Heat a drizzle of oil in a skillet on medium heat (for extra flavor, use sesame oil if you have it). Add the white parts of the scallion & cook for 1 min. - Step 6
Add the shrimp to the skillet & cook until the shrimp is mostly pink, about 4-5 min. - Step 7
Add the mixed vegetables, stir & cook for 1-2 min. - Step 8
Add the cooked rice & stir. Make room in the center of the pan & add another drizzle of oil. Pour the scrambled egg into the center of the pan & stir until the egg is mostly cooked through, about 1-2 min. Next, incorporate the egg into the rest of the rice mixture. - Step 9
Add the soy sauce & diced pineapple. Stir & cook for another 1-2 min. Remove the skillet from the heat. - Step 10
Fill the pineapple boat with the fried rice & top with the remaining sliced scallions. Serve & enjoy !
