  • Step 1
    Preheat the oven to 375°F. Peel & thinly slice the onion.
  • Step 2
    Wash the peppers & remove the seeds. Thinly slice the pepper into strips.
  • Step 3
    In a baking dish, add peppers, onions, Italian seasoning, salt, pepper & a drizzle of olive oil. Mix it all together. Bake in the oven for 20 min at 375°F.
  • Step 4
    After 20 min of cooking, remove the dish from the oven. Create small wells in the veggies. Crack the eggs & add them to the wells. Season with salt & pepper. Bake in the oven for 10 more min at 375°F.
  • Step 5
    Remove the dish from the oven & serve garnished with fresh parsley if you wish! Enjoy!
