Peanut Chicken Lettuce Wraps

Ground chicken
3 Leaf
Iceberg lettuce
1/4 cup
Carrots (shredded)
1/4 in
Ginger (fresh)
1/2 tbsp
Peanut butter
1 tsp
Soy sauce
1/4 tsp
Toasted sesame oil
1 tbsp
Chili garlic sauce

- Step 1
Clean & separate the lettuce leaves. Be sure to to keep the leaves in full form as much as possible! - Step 2
Peel or cut the skin off the ginger & grate it with a zester. - Step 3
Heat a drizzle of oil in a pan over medium-high heat. Add ground chicken, sesame oil, ginger, chili garlic sauce, peanut butter & soy sauce. Stir & cook, using the spatula to break up the meat, for about 10 min or until fully cooked. - Step 4
Mix in shredded carrots. Cook 2 more min. Remove from heat & transfer to a serving bowl. - Step 5
Build the lettuce wraps by scooping a few spoonfuls of the chicken mixture into the lettuce. Roll or fold it up & enjoy!
