  • Step 1
    Peel & small dice the onion.
  • Step 2
    Slice the sausage into rounds.
  • Step 3
    Heat a drizzle of oil in a pan over medium-high heat. Add the onion & the sausage. Cook, stirring for 5-6 min.

    In a small bowl, combine the vegetable stock cube with hot water (3/4 cup of water per serving).
  • Step 5
    Once the sausages are lightly browned, add the tomatoes, rice, veggie stock & Italian seasoning to the pan. Mix it all together & slightly crush the tomatoes with the spoon.
  • Step 6
    Reduce the heat to low. Cover & cook for about 15 min, occasionally checking for doneness. If necessary add more water.

    Serve garnished with fresh parsley if you have any. Enjoy!
