Andouille sausage (smoked)

Yellow onion

Tomatoes (canned, peeled)

White rice (long grain)

Vegetable bouillon (cube)

- Step 1
Peel & small dice the onion. - Step 2
Slice the sausage into rounds. - Step 3
Heat a drizzle of oil in a pan over medium-high heat. Add the onion & the sausage. Cook, stirring for 5-6 min. - Step 4
In a small bowl, combine the vegetable stock cube with hot water (3/4 cup of water per serving). - Step 5
Once the sausages are lightly browned, add the tomatoes, rice, veggie stock & Italian seasoning to the pan. Mix it all together & slightly crush the tomatoes with the spoon. - Step 6
Reduce the heat to low. Cover & cook for about 15 min, occasionally checking for doneness. If necessary add more water. - Step 7
Serve garnished with fresh parsley if you have any. Enjoy!
