Pesto

Flour tortilla (large)

1/8 cup
Mozzarella (shredded)

1/2 cup
Cherry tomatoes

Spinach (fresh)

Shred the rotisserie chicken & add it to a bowl. Drizzle the pesto on top & mix well. - Step 2
Cut the cherry tomatoes in half. - Step 3
Place a flour tortilla on a clean work surface. Add the pesto chicken to the bottom third of the tortilla. Sprinkle with the mozzarella. - Step 4
Place the halved cherry tomatoes on top of the mozzarella. Season with salt & pepper. Arrange the spinach on top of the tomatoes. - Step 5
Wrap the tortilla tightly. - Step 6
This step is optional, but if you'd like a golden crust & melty cheese, you can quickly toast the wrap in a frying pan! Heat a drizzle of olive oil in a pan over medium heat. Place the wrap seam-side down & cook for 1-2 min per side, or until golden & crisp. - Step 7
Cut the wrap in half, serve & enjoy!
