  • Step 1
    Shred the rotisserie chicken & add it to a bowl. Drizzle the pesto on top & mix well.
  • Step 2
    Cut the cherry tomatoes in half.
  • Step 3
    Place a flour tortilla on a clean work surface. Add the pesto chicken to the bottom third of the tortilla. Sprinkle with the mozzarella.

    Place the halved cherry tomatoes on top of the mozzarella. Season with salt & pepper. Arrange the spinach on top of the tomatoes.

    Wrap the tortilla tightly.
  • Step 6
    This step is optional, but if you'd like a golden crust & melty cheese, you can quickly toast the wrap in a frying pan! Heat a drizzle of olive oil in a pan over medium heat. Place the wrap seam-side down & cook for 1-2 min per side, or until golden & crisp.
  • Step 7
    Cut the wrap in half, serve & enjoy!
