Mushroom & Parmesan Soup

Garlic

Shallot

1 cup
White mushrooms (whole)

2 tbsp
Parmesan (grated)

1 tbsp
Heavy cream

Clean & roughly chop the mushrooms, if needed. - Step 2
Peel & mince the garlic & shallot. - Step 3
Heat a drizzle of oil in a pot over medium heat. Add the shallots & garlic. Cook, stirring for 2 min. Add in the mushrooms. Cook, stirring for 2-3 min, or until softened. Season with salt & pepper. - Step 4
Add the parmesan & water to the pot. Reduce the heat to low & simmer for 4-5 min. - Step 5
Turn off the heat & purée with an immersion blender, blender or food processor. Serve garnished with fresh cilantro (optional). Add a drizzle of olive oil & a splash of cream. Season with salt & pepper. Enjoy!
