Fingerling potatoes
1 handful
Green beans (fresh)
1/3 cup
Peas (frozen)

Carrots (fresh)

Yellow onion
1 slice
Bacon
1/4 clove
Garlic

Veggie broth
1/2 tbsp
Butter (unsalted)

- Step 1
Peel & mince the garlic. Chop the bacon. - Step 2
Heat a drizzle of oil in a pan over medium heat. Add the chopped bacon & garlic. Sauté for 2 min. - Step 3
Peel the baby potatoes (if desired). Halve any larger potatoes. - Step 4
Peel the carrots. Cut them into thick matchsticks. - Step 5
Peel & chop the onion. Add the potatoes, onion & carrots to the pan. Stir to combine. Add the veggie broth or 0.25 cup of water (per serving). Cover & cook over medium-low heat for 5-7 min. - Step 6
Wash & trim the green beans. Add the green beans & frozen peas to the pan. Stir. Cover & cook for 3-5 min. - Step 7
Add a dab of butter. Season with salt & pepper. Enjoy!
