1/4 cup
Coconut milk

1/3 cup
Jasmine rice

1/4 tsp
Sugar (granulated)

Cook the rice according to the package instructions. - Step 2
Cut the chicken into large chunks. - Step 3
Heat a drizzle of vegetable oil in a pan over medium-high heat. Add the chicken. Season with salt & pepper. Cook, stirring for 2 min. - Step 4
Add the curry powder & stir. - Step 5
Add the coconut milk, sugar, a pinch of salt & a splash of water. Reduce the heat to low, cover & simmer for 5 min. - Step 6
Serve the curried chicken over fluffed rice. Garnish with chopped cilantro (optional). Season with salt & pepper. Enjoy!
