Prepare the couscous according to the package instructions. - Step 2
Slice the roasted red peppers into strips. - Step 3
Wash & cube the cucumber. - Step 4
Fluff the prepared couscous with a fork. - Step 5
Add the couscous, roasted peppers, cucumber, drained chickpeas & crumbled feta to serving bowl. Garnish with torn fresh basil (optional). Season with salt & pepper. Add a final drizzle of olive oil. Enjoy!
