Toast the bread in a toaster or broiler. - Step 2
In a bowl, combine the avocado, lemon juice & half of the chopped mint. Season with a drizzle of olive oil, salt & pepper. Mash it all together with a fork. - Step 3
Spread the creamy avocado mixture over each slice of toast. Sprinkle pomegranate seeds, crumbled feta & the rest of the chopped mint over top. Enjoy!
