Mango

1/3 cup
White rice (short grain)

1 cup
Coconut milk

1/2 tbsp
Sugar (granulated)

Sesame seeds

Pour the rice into a small pot. - Step 2
Add the sugar & coconut milk. Stir to combine. Then bring it all to a simmer over medium heat. - Step 3
Once simmering, reduce the heat to low. Cover & cook for 15-20 min. Stir every 5 min, adding more coconut milk or water if needed. - Step 4
Peel the mango. Cut the fruit into cubes. - Step 5
When the rice is smooth & creamy, remove it from the heat. - Step 6
Serve the coconut rice topped with mango. Garnish with sesame seeds (optional). Enjoy!
