Lentils (cooked)

1/2
Shallot

2 slices
Smoked salmon

1/2 tsp
Dijon mustard

1 tsp
Red wine vinegar

1 tbsp
Sour cream

1 tsp
Chives (fresh)

- Step 1
Peel & mince the shallot. Add the shallot to a bowl with the vinegar, mustard & a healthy drizzle of oil. Stir to combine. - Step 2
Drain the lentils. Add them to the dressing & toss to coat. Top with torn pieces of smoked salmon. Garnish with a dollop of sour cream & a sprinkle of chopped chives (optional). Enjoy!
