Cook the grains according to the package instructions. Then set them aside to cool. - Step 2
Rinse & drain the canned white beans. Cut the avocado in half. Remove the pit & the peel. Thinly slice the avocado. - Step 3
In a small bowl, whisk together the lemon zest, lemon juice, a healthy drizzle of oil, salt & pepper. - Step 4
Place the arugula in a serving bowl. Add the beans, drained tuna, avocado & quinoa. Drizzle with the dressing. Season with salt & pepper. Toss it all together. Enjoy!
