- Step 1
Bring the butter to room temperature. Preheat the oven to 350°F. In a mixing bowl, combine the flour, 1/2 a cup of softened butter, 1/2 a cup of sugar & a pinch of salt. Mix it all together with your hands until it forms a crumbly texture. - Step 2
Transfer the dough to a greased pie or tart pan. Press it down evenly in the pan to form a crust. (Using the bottom of a drinking glass is handy for pressing!) Trim the edges. - Step 3
Bake the crust for 15-20 min at 350°F, or until golden brown. Remove from the oven. Set aside to cool. - Step 4
As the crust bakes, squeeze the lemon juice into a bowl. - Step 5
Crack the eggs into a small pot. Add the lemon juice, the zest of 1 lemon & the remaining sugar. Whisk it all together. - Step 6
Place the pot over low heat. Whisk constantly for 10-15 min, or until the mixture becomes smooth & thick. - Step 7
Remove from the heat. Whisk in the remaining butter until smooth. - Step 8
Pour the filling into the crust. - Step 9
Refrigerate for 3-4 hours, or until the lemon filling sets. Serve & enjoy!
