  • Step 1
    Cook the pasta according to the package instructions, reserve about 1/4 cup of the pasta water per serving. Drain the pasta & set aside.
  • Step 2
    Cut the chicken into thin strips. Zest the lemon. Heat a drizzle of olive oil in a pan over medium-high heat. Add the chicken & stir. Zest the lemon into the pan (about 1/2 tbsp per serving). Cut the lemon in half & add about 1 tbsp of juice per serving. Season with salt & pepper. Cook, stirring for 2-3 min.
  • Step 3
    Add the cream & reserved pasta water to the pan. Reduce the heat to low. Simmer for 5-7 min, or until the chicken is cooked through. Fold in the fresh spinach leaves. Season with salt & pepper. Remove from the heat.
  • Step 4
    Add the drained pasta to the pan. Mix it all together. Top with as much grated parmesan as you like! Serve & enjoy!
